Spaghetti Pizza Casserole (click for link to recipe)
Casseroles are a huge part of my family cooking. I love that I can make a dish during my “free” time and it is all ready to cook when I am ready to bake it. These casseroles can be made up to a day ahead of time, wrapped in plastic and then stored in the refrigerator.
If you cook extra chicken just once a week when you are making dinner you can put together a casserole for the next night too so dinner is ready to be put in the oven on a busy night. And, most of these recipes can be customized easily for your family such as Spaghetti Pizza Casserole can have any combination of ingredients that you like on pizza added to the dish.

Loaded Potato and Buffalo Chicken Casserole
This dish was a hit. Full of cheese, bacon and buffalo wing sauce it has a bit of a kick to it and is NOT healthy in any way but it sure tastes great. I usually make this about once a year on a Sunday for game day.
My family was unsure of this casserole when I first suggested it but it was super flavorful and it was love at first bite. The Chinese noodles on top add a nice bit of crunch too!
Like a warm Chicken Caesar salad almost. This is a nice, simple dish that had a great crunchy topping.
These are my favorite casserole dish because they are so tender and cheesy! We are huge fans of Enchilada Verde sauce in our house.
