Another of our most favorite dinners. This is a super easy delicious use for leftover corned beef!

Irish Corned Beef Tacos with Guiness Sauce

I am a bit late today in posting but my son had his 5th Grade Walk-Away Ceremony today.  It was really a beautiful ceremony.  After the awards were handed out they announced each child’s name and then they walked down the sidewalk away from the school with the school students and former teachers and all their parents lining the sidewalk.  It was great celebration.  I have to say this school district does not go over the top for the 5th and 8th grade moving up ceremonies but rather does tasteful, memorable, age-appropriate ceremonies.

So we watched and cheered and even cried a bit.  You know it is a sign of a great school when all the 5th grade parents and their children are stopping in to say good-bye to the school secretary and have their picture taken with her.  Everyone cares about the kids.  We even cried giving Mrs. Martin a hug as she is the reason we ended up at Brown school.

But, I wanted to share our dinner last night.  I wasn’t sure how this recipe was going to go over with my children.  Raw coleslaw mix, Guinness beer and horseradish?   When I saw this recipe for Corned Beef and Cabbage Tacos with Guinness Horseradish Cream Sauce  from A Teaspoon of Happiness.com I knew I had to try it.  We love corned beef and I was cooking one over the weekend to make Corned Beef Egg Rolls so I knew I would have some leftover to use in this dish.

Verdict:

This was a hands down winner all around the table.  I couldn’t believe my kids each ate three tacos with raw cabbage on them.  I thought for sure they would be walking away from the table hungry but everyone wanted more.   My daughter was even disappointed that someone else called the leftovers for lunch the next day before she did.

Even the sauce which had a bit of a bite to it was a hit.  We will be having this for dinner again when I have leftover Corned Beef to use up.

I served this with a green side salad.

Irish Corned Beef Tacos with Guinness Sauce

  • Servings: 4-6
  • Difficulty: easy

Ingredients:

  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1/4 cup Guinness Beer
  • 1 Tablespoon prepared horseradish
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon apple cider vinegar
  • salt and pepper, to taste
  • 2 cups corned beef, sliced thinly and warmed
  • 1 bag coleslaw mixture
  • 8 tortillas

Directions:

  1. In a bowl whisk together the sour cream, mayonnaise, Guinness beer, horseradish, mustard, vinegar, salt and pepper.  Set aside.
  2. Warm tortillas according to package instructions.
  3. On each tortilla place 1/4 cup of corned beef, a handful of coleslaw mixture and a liberal drizzle of the sauce set aside in step 1.

    Congratulations to your son’s 5th Grade ceremony!
    By the fact that kids ate all the cabbage inside this meal, I can tell it was delicious.
    It’s been years since I cooked corned beef. Thanks for reminding about this meal.
