Now I very rarely have leftover corned beef because my family loves it so much. So, I pick up 3 to 5 extra to have on hand over the next few months just make some of these dishes such as the Irish Corned Beef Tacos with Guinness Sauce.

Reuben Egg Rolls (click for link to recipe) are a simple and delicious. Adding Swiss cheese and sauerkraut with a Russian dripping sauce makes a tasty treat with leftover corned beef.

The corned beef and Swiss cheese was the favorite version for all of us. If you love Reubens or corned beef you will LOVE these sandwiches!
