Slow Cooker Barbecue Pork Tacos


My daughter passed her driving test yesterday! Yeah! Another licensed driver (well, once we can get her to DMV) in the house. That is going to make so many things quite a bit easier. She was so nervous but she did it.

I am relying on my slow cooker this week. Things are so busy and I need to have meals ready that everyone can eat at different times. Slow Cooker meals such as the Slow Cooker Barbecue Pork Tacos can be kept warm and served as needed. Super bonus for me!

Verdict:

We love the combination of pulled pork, cheese, fried onions, and dill pickles. It sounds weird but believe me it is so good! You need to use the cold packed dill pickles in the glass jar in the refrigerator section. Do not use the heat packed pickles that are shelf stable it will just not taste the same.

Ingredients:

  • 1 1/2 lbs. pork chops, boneless preferred but can use bone in you will just need to debone after cooking
  • 1 to 1 1/2 cups barbecue sauce (I used Sweet Baby Ray’s Honey Barbecue)
  • taco shells (I used the boats)
  • cheddar cheese
  • Refrigerator dill pickles, chopped
  • French fried onions
  • green onions

Directions:

  1. Place pork chops in the bottom of the slow cooker. My pork chops had some fat on them so I did not add any liquid. IF you need to add some liquid use 1/4-1/2 cup chicken stock or water.
  2. Cook pork chops on low 6-7 hours until cooked through and shred easily. Remove any liquid in pan before adding barbecue sauce.
  3. Cover mixture and let sit while preparing other ingredients.
  4. Serve with taco shells, dill pickles, French fried onions, and green onions or other toppings as desired.

            You say it! But making a lot of checklists helps to keep the overview and schedule. Sounds like you are pretty experienced in moving. The biggest move for me was the one over the big pond and back a year laters. First with a toddler and then with a toddler and a baby.

                    I hear you! I guess that was one of the causes of my anxiety when it came to flying. But I found ways to overcome it. I started to trust in life and when my time has come it doesn’t matter where I am and what I do. Because I feel not being close to the end of my life I threw my fear overboard… so to say… lol!

          We don’t make our own shells, yet. I have wanted to try tortillas forever but never seem to have the time. I prefer my own blend of spices for tacos, lots of cumin, chili powder, black pepper, Cayenne Pepper and and a bit of salt to taste.

          1. Oh yes time is of the essence….Do you make the spice blends and have on hand or just use each one at the time to your liking..? I wrap my tacos in Jicama slices …super good..I cant have corn but ive made coconut shells …there great suoer easy and take little time but I do remember when all the kids did dance and sports it was a task to have done ahead..thanks for sharing..

              I tend to make the spice blend fresh each time. We use taco seasoning a few times a month but I don’t like letting it sit in the cupboard. I like using fresh spices (or newly opened) that I have on hand. I will need to try the jimica. Thank you for the tip!

                  If you like it sweeter a teaspoon or two of brown sugar works but we prefer a bolder flavor with lots of cumin 2-3 tablespoons.
