Balsamic Italian Chicken

This is a horrible picture of a really delicious dish. I wish you could have smelled our house while this was cooking. Both kids came into the house and asked what we were having for dinner. They were both excited when I told them.

Verdict:

This dish has tons of flavor. The moment I bit into it and tasted the balsamic vinegar I knew my family would love this. You can serve this over pasta or rice  but we were out of both so I served it with a side of roasted potatoes. They were good with the dish.

Serve with green vegetables and a free salad to complete.

Balsamic Italian Chicken

A chicken dish with lots of flavor.

Ingredients:

  • 1 1/2 – 2 lbs. chicken breast, I cut mine into strips
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and black pepper, to taste
  • 5-6 cloves garlic, finely minced
  • 1 cup grape or cherry tomatoes, halved
  • 1/4 – 1/2 red onion, sliced thinly
  • 1/4 cup balsamic vinegar
  • 1 tablespoon packed brown sugar
  • 1 (4 oz) cup mozzarella cheese shredded
  • 2 tablespoons fresh chopped basil, to garnish
Instructions:
  1. Preheat oven to 425 degrees.
  2. Place chicken breasts in a baking dish and drizzle with olive oil. Season with oregano, basil, salt, pepper and 1 tablespoon of minced garlic. Rub seasoning all over each breast. Arrange the tomatoes and red onion around the chicken in the dish.
  3. Whisk together the balsamic vinegar, sugar and remaining garlic. Pour over the chicken breasts, flip each breast in the sauce to evenly coat.
  4. Bake in preheated oven for 15-20 minutes for chicken strips (depending on the thickness of your chicken breasts), or until no longer pink in the middle. Sprinkle with cheese and broil for 4-5 minutes, or until cheese is melted and golden.
  5. Garnish with basil, and serve with rice or pasta drizzled with the pan juices.
