Deviled Egg Salad

I needed a dish to go with our Hawaiian Burgers (click for link to recipe) and my children do not like salads with mayonnaise. I love classic macaroni and potato salads with mayo. So, the trick became how do I get my children to eat this. I go back to when they are little kids. They wouldn’t eat quesadillas but they would eat Mexican grilled cheese. I needed to change the name! They love Deviled Eggs and it became Deviled Egg Salad.

Verdict:

My kids love Deviled Egg Salad. Made the salad the same way I would make deviled eggs and just added macaroni to it. They both said how much they liked this salad. I tried not to laugh but it worked!

Deviled Egg Salad

A side for your picnics that reminds us of Deviled Eggs.

Ingredients:

  • 12 eggs, hard boiled
  • 12 oz elbow macaroni, boiled to al dente and rinsed in cold water
  • Mayonnaise
  • Prepared Mustard
  • salt and black pepper
  • splash of apple cider vinegar
  • paprika for topping, if desired

Directions:

  1. In a large bowl mix macaroni, a splash of apple cider vinegar, mayonnaise, mustard, salt and black pepper into a bowl.
  2. Add chopped hard boiled eggs. Taste and adjust spices as needed.
  3. Top with Paprika before serving if desired. Chill salad until ready to use.
