BBQ Chicken on Texas Toast

This was one of the days that it was almost 110 outside with the heat index. Even grilling seemed difficult because you had to stand outside in the heat. Dinner was made in our slow cooker. It could cook all day and barely raised the heat in the kitchen. Add to that homemade bread in the breadmaker (you can easily substitute a loaf of bakery bread) and a quick toast in the oven to finish the toast off and it was a hearty meal that still beat the heat.

Verdict:

At first my kids thought I was a bit crazy for putting pulled BBQ chicken on toast. Then they tried it. I think they may never go back to simple rolls again.  They could pick up bites of the toast and eat the chicken right on the bread or cut it into little bites. They loved the crunch against the texture of the pulled chicken.

I served this with brown beans and a green salad.

BBQ Chicken on Texas Toast

A nice base for BBQ Chicken.

Ingredients:

  • 2 lbs. chicken breasts
  • 16-18 oz. barbecue sauce
  • large loaf of good bread (preferably bakery or homemade)
  • butter, for toast
  • garlic powder, for toast

Directions:

  1. Cook chicken in slow cooker on low for 6-7 hours until cooked through. Shred with two forks and add barbecue sauce.
  2. Stir and cook for 30 minutes to 1 hour until warmed through.
  3. While chicken is finishing cut bread into large slices of 1/2″ to 3/4″ thickness.
  4. Place bread on a rimmed baking sheet buttering both sides well. Sprinkle garlic powder over top layer of buttered bread.
  5. Place in oven at 350 degrees until bread is browned lightly on both sides.
  6. Serve chicken over a top of warm bread.
