Cheesy Chicken and Rice

As we were coming to the end of the month I was digging into the bottom of the freezer (remember we do one big grocery shop a month) and we found more chicken breasts. I was feeling in the mood for comfort food (it is getting chilly at night again and I can see one of the trees across the street starting to turn on a few of the leaves) because I know back to school is not too far off. Though we have the luxury of not going back before Labor Day I know many schools will be starting in the next few weeks.

Verdict:

I have to say this one was a unanimous hit! Everyone asked to have this again for dinner very soon. They thought the chicken was perfectly cooked. The sauce from the chicken paired well with the rice and it was all very flavorful.

Serve this with a green side salad and sliced carrots for a delicious meal!

Cheesy Chicken and Rice

An easy chicken dish with a cheesy flavorful topping

Ingredients:

  • 2 lbs. chicken breasts, pounded to 1″ thickness
  • 8 oz mozzarella
  • 2 cups sour cream
  • 1 1/2 cups Parmesan, divided (best with freshly grated but can use the green can cheese)
  • 2 tablespoons flour
  • 2 teaspoon dried oregano
  • 2 teaspoon dried basil
  • 2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper, freshly ground
  • Parsley or green onions for garnish, if desired

For Rice:

  • 2 cups long grain rice
  • 4 cups chicken stock

Directions:

  1. Preheat oven to 375 degrees.
  2. Coat rectangular baking dish with a little olive oil.
  3. Mix sour cream with a half cup of Parmesan, salt and pepper, oregano and basil, garlic powder and cornstarch together.Place chicken breasts in baking dish, top each  mozzarella  and smother the chicken with the sour cream mixture. Sprinkle remaining Parmesan cheese over the top of the chicken breasts.
  4. Cook for 40-50 minutes until chicken has completely cooked through.
  5. While chicken is baking make rice according to package directions substituting chicken stock for water.
  6. Serve chicken over rice. Top with parsley or green onions for garnish.

  3. A favorite dish dad made was chicken. And rice. Chicken pieces, can of cream of chicken or cream of mushroom, over rice, white or your choice, in a baking dish,. Bake @ 35 min or till chicken is to your liking, and the rice is cooked. Serves as many as pieces of chicken available.
