
Happy Labor Day!
School is starting tomorrow. We are spending the day getting ready and having a small family picnic. The weather the last few days has been cool but of course the weather predicted for the first day of school? High 80s! At least it is not rain predicted like usual. So, we are in that in between seasons time of not quite fall and casseroles, soups, and all things pumpkin and apple and summer’s salads, cook-outs, and late night dinners.
This is one of those transition meals for us. It is easy to make and the kids love the cheesy broccoli and rice. It is comforting on those nights when it is dipping down into the low 50s or high 40s at night.
Verdict:
The kids like that this is super simple and not fussy. They can add some hot sauce, garlic, salt, or black pepper to their liking and it is quickly eaten up! I serve this with a simple green salad and green beans to complete the meal.

Kielbasa, Rice, and Broccoli Skillet Dinner
A simple skillet meal that is great for a back to school meal.
Ingredients:
- 1 tablespoon olive oil
- 28 oz All Beef Kielbasa (sliced into thin rounds)
- 1 onion, diced
- 1 red pepper, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 garlic cloves, finely minced
- 2 cups white rice
- 4 cups chicken stock
- 2 – 3 cups broccoli florets
- 2 1/2 cups sharp cheddar cheese, shredded and divided
Directions:

Heat olive oil over medium high heat in a large skillet.

Brown kielbasa in the skillet, 3-4 minutes on each side. Remove kielbasa to a plate, put in oven to keep warm.

Saute onion and bell pepper until onion is translucent. Scrape the bottom of the pan as you are stirring.

Add garlic and cook for a minute. Season with salt and pepper.

Add rice to the skillet and stir to combine. Continue stirring for 1 to 2 more minutes until rice starts to lightly brown.

Add the chicken stock and bring to a boil. Reduce heat to low, cover, and cook for 15 minutes. If the stock evaporates too quickly add a bit of water.

Without stirring the rice, add the broccoli to the top of the rice and cover again. Cook an additional 8-12 minutes or until rice is tender and broccoli is steamed to your liking.

Stir in kielbasa and 1 1/2 cups of cheese. Taste and adjust spices as necessary.

Top with remaining cup of cheese. Cover with lid and let sit for 2 to 3 minutes or until cheese is melted.
- Serve hot.
