Cranberry Slow Cooker Pork Loin

Our weather has take  a strange turn. It was really very nice and cool out for about a week or so. Highs in the low 70s and high 40s and low 50s at night were perfect for me. We could open the windows at night and turn off the air conditioning. It was wonderful for sleeping. Now we have made a turn back to the 80s and 90s and lows in the mid 70s. I am ready for fall foods! So, I am charging ahead with my slow cooker.

This is a perfect meal for these days as the slow cooker doesn’t heat up the whole house and still lets you dive into the great fall flavors like pumpkin, apple, or cranberry. My daughter made this meal and was so impressed with herself! She loves the slow cooker and thinks it makes magic meals.

This was so delicious! The pork loin was juicy and the sauce added a delicious hint of sweetness. My daughter loved that when she made it the sauce easily pulled together and the leftovers were amazing the second day too!

We served this with a side of mashed potatoes, green beans, and a green side salad.

Cranberry Slow Cooker Pork Loin

A slow cooker meal that creates a juicy pork loin and a sweet sauce for a topping.

  • 3 lb pork loin
  • 3/4 cup cranberry sauce (jellied or whole berries)
  • 1/2 cup cranberry juice
  • 1/2 cup sugar
  • 1 teaspoon mustard
  • 1/2 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

  1. Place roast in slow cooker. In a medium size bowl mash cranberry sauce; stir in cranberry juice, sugar and seasoning until mixed. Pour mixture over pork loin. Cover and cook on low for 6-8 hours.
  2. Remove pork loin from crock pot to platter and cover with tin foil to keep warm. Remove 2 cups of liquid from the slow cooker using as much fat from the liquid as possible. Pour liquid into saucepan and bring to a boil over medium heat.
  3. In a small bowl combine cornstarch and cold water to make paste. Stir paste mixture into saucepan. Cook and stir until thickened. Serve with the pork.
