Easy Pumpkin Bread

Now that we are really feeling like it is almost fall with the back-to-school days upon us it is time for all things pumpkin spice. I am not usually a fan of pumpkin spice but am all in on team apple cider. This pumpkin bread though is a favorite of our entire family. My sister-in-law used to make this for family gatherings and we haven’t had it in years. I decided it was definitely time to bring it back into rotation.

It is simple to make and keeps well for days. This is also great to freeze and pull out on those mornings you want a special treat before work or school.

Verdict:

As I said this is my family’s favorite pumpkin bread. It has a strong spice taste with a light pumpkin taste. My family is not into pumpkin flavored items but this one they love!

The bread slices well and is not too crumbly. Could easily be made into pumpkin bread French toast or a delicious casserole!

Easy Pumpkin Bread

A delicious bread that is a great breakfast treat or after school snack.

Ingredients:

  • 3 1/3 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup chopped nuts (if desired)
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups canned pumpkin

Directions:

  1. Preheat oven to 350 degrees. Spray 2-3 large loaf pans with non-stick spray.
  2. Mix dry ingredients together in a large bowl.
  3. Add remaining ingredients to bowl and mix until smooth.
  4. Fill loaf pans 1/3 to 1/2 full.
  5. Bake for 1 hour or until center is baked through.
  6. Remove from pans after 5 minutes to cool completely. Slice and eat or freeze for later use!

    This one sounds really good, and the recipe looks easy to follow. I will give it a try. On saying this me & baking have an adversarial relationship. Will see how it goes:))

      Honestly, I am NOT a big baker. I love throwing things together and making a meal. Baking is to precise usually for me. But, this is fairly easy and makes three loaves so it lasts me awhile! Hope you like it!!

        You sound like me with cooking. Anything on the spice rack is fair game…reproducing the same flavor is most times rough. I’ve taken to leaving all the spice used on the counter and taking a picture of it. A good Sunday to you:)
