The weather is amazing lately. Over the last two weeks there have been several days where the lake has been battering the shore. The first week up to 20 feet of shore was washed away by the waves. It is so powerful that you cannot believe that you are on the lake and not the ocean. I love just listening to the roar of the waves. I am definitely a water baby.
The slow cooker is out! It is that time of year (although I like to use mine year round!). This is a super simple dish that isn’t anything amazing but is more a nice warm comfort food. The pineapple soaks up the soy sauce and the pork mixed with the pineapple juice and brown sugar makes it flavorful. I cooked mine all day so it shredded easily. I prefer to be able to slice the pork so if you prefer yours sliced don’t overcook the pork. It slices easily if you brown it first in a skillet on all sides before putting it in the slow cooker and then cook to 145 degrees.
Everyone kept saying that this was a really nice comforting meal. It was a cold windy night and this just felt warming and like a giant hug. I served this with extra soy sauce for topping as desired and a side of green beans.
- 3-4 lb. pork loin (trimmed of visible fat)
- 2 tablespoons vegetable oil (if you wish to brown your pork loin first)
- 1 (23.5 oz) can pineapple with juice
- 4 garlic cloves, finely minced
- 1/2 cup soy sauce
- 1 cup brown sugar
- If you wish to brown your pork loin first heat oil in a large skillet over medium high heat. Add pork loin and brown on all sides before removing to slow cooker. Add all ingredients and stir well.
- Cook for 5-6 hours until temperature with meat thermometer reads 145 degrees. You can cook it longer but meat will shred and may become a bit dry.
- Serve over rice if desired with extra soy sauce.
