Slow Cooker Barbecue Pork Tacos

Looking for something a bit different after all the turkey or ham of the holidays? I cooked a pork loin in the slow cooker so that we could have simple meals over the next few nights that everyone could just make as they needed. With everyone in and out of the house at different times we needed super simple things to warm up. Cooking a pork loin with barbecue sauce was perfect to make several different meals.

Verdict:

We love Barbecue Pulled Pork and it can easily be added to several different dishes to make simple meals that can be heated up when you need to grab meals at different times.

This is great because you can make add to it what you like. Serve it with cheddar cheese and fried onions as we did or add veggies and toppings as you like.

Slow Cooker Barbecue Pork Tacos

  • Servings: 8-10 large tacos
  • Difficulty: easy

Barbecue Pork can make several tasty dishes such as these BBQ Tacos.

Ingredients:

  • 3-4 lb. pork loin
  • salt, black pepper, and garlic powder
  • 1 (18 oz) bottle of barbecue sauce (my favorite is Sweet Baby Ray’s)
  • Sharp cheddar Cheese, shredded
  • Crispy Fried Onions
  • Flour tortillas

Directions:

  1. Liberally salt, pepper, and garlic powder the pork loin and place it in the bottom of the slow cooker. Cook for 3-5 hours on high according to size.
  2. Shred pork with two forks and add barbecue sauce to pork. Stir well and cover to heat. Once the pork is fully cooked and warmed serve on warmed flour tortillas with cheddar cheese and fried onions.

  1. So, you don’t need to do any pre-cooking in a skillet or something? I always worry about how “done” the meat will be after slow cooking if it’s not meat such as ground beef.

      No pre-cooking. You can if you like. Best way to check for doneness without overcooking is to use a meat thermometer in the center before shredding. I recommend having a good meat thermometer for everything you cook.
