Chicken Tenders with Hot Honey Sauce

Day 27 – I have been doing a bit of reading on stress eating. Everything I read is everyone talking about how we are all seeking comfort foods. Grocery stores are reporting spikes in processed foods, chips, cookies, and candy sales. Cortisol, the stress hormone, is the main reason we seek out the foods high in fat and sugar. Let’s admit it we are all stressed. If it is not fear of the virus it is fear of job loss, financial instability, child education, and our friends and families well being. The good thing is we are all in the same place. No one is judging each other for our food choices right now. If all we can do is muster a blue box of macaroni and cheese for dinner it is okay. We are all getting through the best we can. I may try to throw some fruit salad or a veggie tray at my kids once in awhile but making it through together is the theme.

That being said, we went little kid comfort food for dinner with a bit of a twist. One of my son’s favorite things are spicy foods. We decided to take the sweet and spicy to another level and add it to chicken tenders. Totally a comfort food dinner.

Verdict:

We really liked the chicken. The sauce is what definitely made the difference. It is not a great picture but the flavor far outweighed the look. The batter stuck to the pan (forgot to spray) so most of it came off, oops. But, this is a good dish.

Chicken Tenders with Hot Honey Sauce

  • Servings: 4-6
  • Difficulty: easy

Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 cup flour
  • 2 eggs
  • 1 cup Panko bread crumbs
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder

Hot Honey Sauce

  • 1/4 cup honey
  • 1-2 tablespoons Frank’s hot sauce

Directions:

  1. Preheat oven to 400 degrees. Place 2 metal cooling racks onto a rimmed baking sheet. Spray well with non-stick spray.
  2. Cut chicken breasts into strips.
  3. On a plate mix together flour, garlic, black pepper, and onion powder. On a second plate mix eggs until well beaten. On a third plate place bread crumbs.
  4. Take chicken strips and dip in flour, then egg (let excess drip off), then roll in bread crumbs. Place each strip on baking sheet and continue until ingredients are used.
  5. Bake for 12-15 minutes on one side. Flip over and cook for 10-12 minutes on the other side until chicken strips are cooked through and are very crispy.
  6. Meanwhile, heat together honey and hot sauce until warm. Taste sauce and adjust flavors to liking.
