Cheesy Italian Sausage Dip

Day 30 – We have one family member who is loving having us all home all the time. She is loving all the attention and that there is usually someone with a free hand at all times day and night to pet her and love on her. Her fur is amazingly soft from all the petting. She is starting to lose a bit of her youthfulness. She no longer jumps as regularly to my daughter’s top bunk bed. She spends more time lazing on the bottom bunk. But, she is loving her time with us. Are your fur babies happy to have more of your attention too?

We are trying to get a bit inventive with our dinners.  Because we are eating at home all the time I am trying super hard from keep us from getting bored. I am going back to our old standards of theme nights which are fun.  They can be as simple as a Japanese dinner – eat it on the coffee table while sitting on pillows around the coffee table. Pub food night – serve the food on the counter and have a cocktail or two with those who are old enough or kiddie cocktails for those who are not old enough. Or even Fancy Dress Night – put on your favorite dressy clothes and pull out the linen table cloths and good china. Having the whole family pitch in making the meal, setting it up AND cleaning up makes us all work together and have a fun night.

This was part of our “Italian” night. We went super simple with a salad and dip with bread to make it a simple fun weeknight meal.

Verdict:

This dip is super cheesy but has a bit of a kick to it. If you don’t really care for spice or very much spice you may want to cut back or leave out the red pepper flakes and the pepperoncinis.  I think you need at least some of the pepperoncinis for flavor but taste as you make it to see how the heat is for you.

This was a great hit for us. The entire family loved the antipasto salad that we had with the dip and though the bread, dip, and salad went together well. I toasted the bread to give it a bit of a crunch. You can also use tortilla chips, celery, or carrots as dippers too. If you can make this dip a day ahead and let it sit in the refrigerator overnight before putting it in the casserole dish to bake the flavors blend even better!

Cheesy Italian Sausage Dip

  • Servings: 30-35

Ingredients:

  • 12 oz cream cheese, softened
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon red pepper flakes
  • 1 3/4 cups Mozzarella Cheese, shredded and divided
  • 1/2 cup Parmesan cheese, freshly shredded
  • 1 lb Italian sausage, cooked and drained (you may use sweet or hot depending on how spicy you want your dip)
  • 1 (15 oz) can diced tomatoes, drained (but not rinsed)
  • 1/2 cup Pepperoncini peppers, drained and diced (less if you want it less spicy)
  • Crostini, toasted bread, tortilla chips, celery, carrots, or crackers for dipping

Directions:

  1. Preheat oven to 350 degrees F. Spray a 2 1/2 quart (I used an 11-inch oval) baking dish with nonstick cooking spray and set aside.
  2. Combine all ingredients together, except 3/4 cup of Mozzarella. Mix until very well combined.
  3. Spread the sausage dip into the prepared baking dish. Sprinkle with reserved mozzarella.
  4. Bake for 20 minutes, or until bubbly around sides. For additional browning of the cheese, switch to the broiler during the last few minutes, but watch closely as it can burn quickly.
  5. Serve with crostini, crackers, tortilla chips, celery, or carrots for dipping.
