Jimmy Dean’s Crustless Quiche

Day 68 –  Once a week we have Breakfast for Dinner. It makes my dinner planning easier. Also, breakfast for dinner meals tend to be a bit simpler to make and my family thinks it is fun. Have a bunch of cereal open that you want to get rid of? Make a cereal bar. Place out all the cereals and let them mix and match the cereals in a bowl. Add chocolate milk or white milk. A fun simple dinner for them and it helps clear your cupboards and not let those last little bits of cereal no one wants to eat go stale!

Searching for inspiration for our Breakfast for Dinner I ran across this recipe on the Jimmy Dean website for Crustless Quiche. We had breakfast sausage and my family loves quiche so why not give it a try.

Verdict: Okay. First thing is this is not a quiche in the traditional sense. I would call it a Breakfast Casserole or maybe an Egg Bake if I were titling the recipe. It has a bready texture not a smooth creamy texture. Don’t get me wrong we really liked it and it was delicious heated up for lunch the next day but we didn’t expect it to be so spongy.

We served this with fruit salad to complete the meal.

Jimmy Dean's Crustless Quiche

  • Servings: 6-8
  • Difficulty: easy

Ingredients:

  • 1 (16 oz) roll Pork Sausage, cooked, crumbled, drained
  • 1 onion, diced
  • 1 cup sharp cheddar cheese, shredded
  • 4 eggs
  • 2 cups half-and-half or  whole milk
  • 1 cup all-purpose baking mix
  • Suggested toppings: Sour cream, chopped tomatoes, chopped fresh parsley

Directions:

  1. Preheat oven to 400°F. Place sausage in lightly greased 13×9-inch baking pan; top with onions and cheese.
  2. Beat eggs, half-and-half and baking mix until well blended. Pour over cheese.
  3. Bake 20-25 minutes or until cooked through. Cool 5 minutes. Cut into 12 squares. Add toppings as  desired.
