Cucumber Cous Cous Salad

Day 73: Finally getting outdoors to do some work. Our flower beds were overgrown with clover and sea grass that we never cut down last fall.  Next is getting some mulch for the beds but that will have to wait for awhile. I am not ready to venture into a big box hardware store just yet. We are looking to get the porch and patio furniture outside and maybe try and use our backyard. We have started grilling a bit more already. Some summers we grill just about every night and others we almost never grill. I think this is going to be a grilling summer just to make ourselves feel better about life. For some reason grilling makes summer taste better.

This summer salad is super easy and goes with so many different main dishes. We served it the other night with fish but it would be delicious with any grilled meat or Mediterranean style meal.

Verdict: I am not a fan of lemon but I still like this dish. Everyone in my family likes this because it just makes a Mediterranean Feta Salad a bit different. It is so easy to make the cous cous and there was still plenty at the grocery store recently because I think many people don’t know what to do with it. I prefer the pearl cous cous but if you have other on hand that would work too.

I served this with a stuffed cod (click for link to recipe) to complete the meal.

Cucumber Cous Cous Salad

  • Servings: 6-8
  • Difficulty: easy

Ingredients:

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/2 cucumber, cut lengthwise, seeded, and diced
  • 1/2 red onion, cut in half and diced
  • 1 lemon, juiced, about 3 tablespoons
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon honey, warmed
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 4 ounces feta cheese
  • Salt and pepper, to taste

Directions:

  1. Put the couscous in a large bowl and pour the boiling water over it. Cover with a lid or a plate and set aside for 5 minutes. Then remove the lid and fluff with a fork.
  2. Mix the couscous, cucumber, and onion.
  3. Whisk together the lemon juice, olive oil, honey, chili powder, and cumin, then toss with the couscous.
  4. Crumble the feta over the top and stir well. Taste and season generously with salt and pepper.
  5. Serve immediately, or refrigerate until ready to serve.

    My cousin enjoyed this style of recipe. Mother used a cucumber onion vinegar recipe. Other salads are delectable.
