I don’t know why I don’t use sweet potatoes more than I do. I love them but I usually just grab a bag of potatoes at the grocery store and totally forget about sweet potatoes. They are so versatile – bake, mashed, fried, or to what you can put on them. These were meant to be grilled but we got busy and baked them instead. So glad we did!
Verdict: These are so good! Tons of spice and flavor make a simple side dish the hit of the meal. Just a drizzle of honey mustard over the top added a nice flavor to the entire side dish.
I served these with cheeseburgers and Sweet & Tangy Four Bean Salad and they made an amazing meal. So, simple and yet the meal entire meal had tons of flavor.
Slice the potatoes into 6 wedges each. Place potatoes in a bowl. Add oil, salt, cumin, chili powder, oregano, onion powder, garlic powder, cinnamon, and cayenne powder to potatoes and mix well coating the potatoes.
Place wedges in a parchment-lined baking sheet. Cook for 20-25 minutes, or until the largest wedges are fork tender.
Make the honey mustard dipping sauce by mixing together dijon and honey in a small bowl.
Serve the potatoes hot topped with honey mustard sauce.
