Salt and Vinegar Potatoes

We can breathe again. My wife’s job is safe for now. It was tough just being on hold for a week not knowing if I should be preparing a grocery list for the next month or if I should be preparing a list of what needs to be fixed to sell the house.

Dinners and everything have been kind of crazy because for the last week we have been fretting about all the “What ifs” in the world but these potatoes were created during this time. As a family we LOVE vinegar. Salt and vinegar potato chips make a regular appearance on our grocery lists. The tangy zip of the vinegar with the sharpness of the salt? YUM!

Verdict: These were amazing! You can up the vinegar (like we did) if you like them a bit tangier. First cooking the potatoes in vinegar and then splashing a little more over the top when they are done cooking? Yum! We like the red wine vinegar taste but you can choose another such as white for a more mellow flavor or balsamic for a deeper, richer flavor. All up to you!

I served these with grilled steak and they were a hit!

Salt & Vinegar Potatoes

  • Servings: 4-6

Ingredients:

  • 2 pounds small red potatoes, halved, quartered if large
  • 1 cup plus 1/4 cup red wine vinegar
  • 1 tablespoon salt
  • 2 tablespoons butter
  • salt and black pepper, for seasoning

Directions:

  1. In a medium saucepan add potatoes, 1 cup vinegar, and 1 tablespoon salt and enough water to cover the potatoes by 1”.
  2. Bring to a boil, reduce heat, and simmer until potatoes are tender, 20–25 minutes; drain and pat dry.
  3. In a large skillet melt butter over medium-high heat. Add potatoes and season with salt and pepper.
  4. Cook, stirring occasionally until golden brown and crisp, 10-12 minutes.
  5. Drizzle with vinegar. Serve potatoes hot with extra vinegar as desired.
