
My family loves these little mini buffets for dinner. It is almost like playing with your food. We had 2 French baguettes leftover that we wanted to use up that were going to be rock hard by the morning so we decided to slice them and toast them for crostini.

Then we raided our cupboards to find things to put on the crostini. We had herbed goat cheese, regular goat cheese, Parmesan, Havarti, and Gouda. Genoa salami, and prosciutto for the meats. We had shrimp to use so I sauteed it with some butter and garlic. Add some cubed melon, sliced apples, and black berry fruit spread for fruits. And some honey, Thai and Black Pepper , sliced roasted red pepper, basil, and stone ground mustard we had a buffet!

We tried all different combinations trying to find some of the best tasting ones. Herbed goat cheese with shrimp scampi and roasted red pepper was a hit!

Goat cheese with Thai pistachios and basil was an unexpected surprise!

I am envious of the seafood from RI! In landlocked MI Red Lobster is a fancy seafood meal. 😁
