We got my daughter’s test back and it was negative! Yeah! She was thrilled. She didn’t think she had it but it is still a bit unnerving knowing that you can have it and be asymptomatic. Now, that she has that down she has also decided to take at least a one semester deferment from college and possibly a year while she decides if she wants to stay at her current college or transfer to a different school. We figure this is the best time to defer with Covid and all learning being online (which is difficult for her). She would not be in the dorms anyway because we are not spending $25,000 for her to live in a room and go to classes online with no direct professor contacts. So, she is looking for a job and opening up her world of possibilities.
We let her choose dinner the other night because she has had a tough week. Ribs are her favorite go to order out meal. I almost never make ribs because I could never seem to get them right until I stumbled across this method. Slow cooker for tenderness and a quick broil in the oven make them perfect.
Verdict: This was so good! The meat fell off the bones and the barbecue sauce caramelized under the broiler but didn’t over cook the ribs. Pick your favorite barbecue sauce to rub on the ribs.
I served this with green beans, baked potatoes, and a garden salad to complete the meal.
