We are still waiting for Covid test results. I think it was easier waiting for our children to be born than it is waiting for these test results. At least then we had the anticipation of something good coming. Right now we are in kind of this limbo. Can we go get groceries on Thursday? Can we go for a walk? Can we just leave our house?
The one good thing is we are using up everything we have in our freezer again because we are not shopping at all. You know I love these little slider rolls. Need a quick meal that you don’t really want to think about? With these little rolls you can make all your favorite sandwiches into a meal. Barbecue Chicken pizza? Make it into a slider. Ham, broccoli, and cheddar soup? Make it into a slider. Seriously layer ham, cheddar and some steamed broccoli on a roll with a bit of Dijon and topping. Sounds delicious to me.
Verdict: We love these little sandwiches no matter what they are made with. The best part is they take no time at all to make and if you serve them with a green side salad dinner almost makes itself!
1 dozen King’s Hawaiian Dinner Rolls (or similar slider rolls)
Crispy Chicken Strips (homemade or frozen such as Tyson)
Ham (I used leftover spiral sliced ham from a previous meal – Deli Virginia Baked Ham also works well)
Sliced Provolone or Swiss Cheese
3 tablespoon Dijon mustard (for sandwiches)
1/2 cup melted butter
1 tablespoon whole grain mustard
1 teaspoon Worcestershire Sauce
1 teaspoon dark brown sugar
1 tablespoon poppy seeds
2 tablespoons dried minced onion
Directions:
Preheat oven to 350 degrees. Prepare a 13 x 9 casserole dish with non-stick spray.
Cook the chicken according to package directions. (I used an air fryer and they were done in no time!)
Split the rolls in half horizontally leaving them in one sheet of bottoms and one sheet of tops. Place the bottom half of the rolls in the prepared baking dish.
Top the roll bottoms with chicken. Place the ham and the sliced cheese over the top of the ham to completely cover. Spread the Dijon mustard over the cheese.
Place tops of rolls on top of the cheese.
Mix together the melted butter, mustard, Worcestershire Sauce, brown sugar, poppy seeds and dried onion until the sugar is dissolved.
Spoon mixture over rolls.
Bake for 15 to 20 minutes until the rolls are lightly browned and the cheese has melted.
