Pizza Bites

We have a block party once a year for our street. Our neighborhood is in the midst of a change-over. Three of the families have moved our this year as they needed more room than their houses had. New families have or are moving in with small children and a few homes will probably be for sale soon as those families have grown and gone and the parents are left at home in bigger houses than they need.

We have a great neighborhood but this is the one time a year we block off the street and the kids ride around and play in the road, the parents eat and talk, and we all catch up on what has happened in families over the past year. We all bring a dish to share and the host family provides hamburgers and hot dogs. Such fun.

Verdict: These were a hit. I wanted something in individual servings that we could easily serve with a personal fork. I picked up a bottle of squeeze pizza sauce to serve with these so no one had to touch the food or the sauce spoon.

Hint: You know I love cheese so I sprinkled a little extra freshly shredded Parmesan over the top before baking the muffins. They were delicious!

pizza Bites

  • Servings: 48 mini muffins

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons Italian seasoning
  • 1 cup fresh shredded Parmesan cheese
  • 1 teaspoon sugar
  • 2 tablespoons extra virgin olive oil (plus more to grease pans)
  • 1 1/2 cups whole milk
  • 2 eggs, beaten
  • 2 cups shredded 4-cheese pizza blend
  • 1 (5-ounce) package mini pepperoni rounds

Directions:

  1. Preheat oven to 350°F.
  2. Reserve a hand full of pepperoni (about 1/4 cup).
  3. In a large bowl, combine flour, baking powder, Italian seasoning, Parmesan cheese, sugar, olive oil, milk, and eggs. Mix in the cheese and pepperoni (less the handful).
  4. Prepare (2) 24 cup mini-muffin pans by greasing with olive oil (or spray with cooking spray).
  5. Mix batter and add 1 heaping tablespoon scoop to each muffin cup. Top each muffin with 2 or 3 of the reserved pepperoni. Bake until golden brown about 20 minutes.
  6. Allow to cool for 5 minutes, remove from muffin tin, and serve with favorite marinara sauce.

    This sounds like a great football app. Do you think other ‘toppings’ would work like olives, mushrooms or pineapple? I’m wondering about the moisture content being altered within the dough.

      I have used very finely minced onion, peppers, and olives. Just a little bit of each and I kind of push them in after putting the dough into the cupcake pan. I would say if you only use a little bit and put them in after the dough is made it should be okay. These are little pieces so you don’t want tons of items in them. or they will not hold together.

  4. How fun! I run our block party every year and we didn’t have one this year because of the pandemic…I miss it so much! But these apps look great…I’d definitely give them a try.
