Bubble-Up Chicken Cassesrole

This recipe started as something I found from Pillsbury.com to use up the last of the refrigerator biscuit dough that I had bought on sale. I try to plan ahead if I buy a special ingredient or spice. I hate food waste. I am always trying to find new ways of using up those “leftovers.” This is a great use for cooked chicken. I try to keep chicken on hand for simple dinners. Poached, baked, or grilled having extra cooked chicken on hand in the freezer or refrigerator is a God send. Just have a plan to use it all up before it become freezer garbage.

Verdict: My family loved this recipe. It was cheesy and flavorful. If you want to add extra Ranch dressing mix for your family – go for it! Try different cheeses, maybe some bacon. This is up to you. Experiment with your food. Look at my recipe and change it to what your family would love.

Bubble-Up Chicken Casserole

  • Servings: 6-8 large

Ingredients:

  • 3 cups cooked chopped chicken, or canned chicken
  • 2 (10.5 oz) cans cream of chicken soup
  • 1 1/2 cups sour cream
  • 1 cup grated sharp cheddar cheese
  • 2 Tablespoons dry Ranch dressing mix
  • 1 (12 oz) can refrigerator biscuit dough, cut each biscuit into quarters
  • 1 additional cup grated cheese for top of casserole (cheddar, Colby Jack or Mozzarella work well)

Directions:

  1. Preheat oven to 350 degrees. Prepare 9 x 13-inch pan with non-stick spray.
  2. Combine, in a large bowl, chicken, soup, sour cream, 1 cup grated cheese, Ranch dressing mix until well blended. Add cut biscuits and stir.
  3. Pour chicken mixture into pan. Top with additional cup of cheese.
  4. Bake for 25-35 minutes, until mixture is bubbly and biscuits are browned.
