Creamy Sausage Rigatoni

I love fall. Opening the windows to the cool breezes at night make for great sleeping weather. The hearty casseroles, stews, and pasta dishes are a favorite. Apple cider, pumpkins pies, and donuts abound. Bright mums, pumpkins, and cornstalks dot the houses and downtown stores. All of it just makes me so happy.

Now, I really don’t like what comes next as far as winter weather but I am looking forward to days spent next to the fire place, reading books while wrapped up in big fluffy blankets, and hopefully some more quiet nights at home with my family. We are already making plans as to what we want to do if we need to pull back in when the flu season starts. I think this dish will be a must on our dinner list.

Verdict: We love the flavor of this dish. It is hearty and has a great blend of tomato, cream, and cheese to make it smooth. It is belly warming yum!

I serve this with green beans and a green side salad to complete the meal. If you want to be really decadent add a side of garlic bread to your meal.

Creamy Sausage Rigatoni

Ingredients:

  • 16 ounces pasta + 1 cups reserved pasta water
  • 3 tablespoons olive oil
  • 1 onion, diced
  • 1 1/2 pounds Italian sausage, bulk or removed from casing
  • 3-4 cloves garlic, crushed
  • 1-2 pinches red pepper flakes
  • 1 (6 oz.) can tomato paste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1/4 cup+ grated Parmesan cheese, plus more for garnish

Directions:

  1. Cook pasta according to package directions. Drain, reserving 1 cup of the pasta water.
  2. While the pasta is cooking heat oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add the sausage. Cook, breaking into small pieces, until no longer pink. Drain any excess grease.
  3. Add garlic, red pepper and tomato paste and cook a few minutes more until tomato is fragrant. Stir in the broth and simmer until liquid is reduced by half.
  4. Add cream to the pan and bring to a simmer. Gradually add pasta water until sauce reaches desired consistency. Taste and season as desired.
  5. Stir in Parmesan cheese. Garnish with more Parmesan cheese, if desired.
