Monterey Breakfast Pie

When my kids were little they loved Bisquik Cheeseburger Pie. Bisquik is a baking mix in America used to make quick pancakes and dropped biscuits plus they had recipes on the box for a whole range of dinner “pies”, which were more like meat with biscuit topping not a traditional pie that we think of when we think of pie. This recipe is a take-off of one of those pie recipes.

Verdict: This is so simple to make and the best part is you can take the basic recipe and change it up as you like! Change the meat, change the cheese, change the spice and you have a whole new dish that your family will love. Make it taco flavored, make it sweet, make it with ground turkey – the flavors are up to you!

I served this with a side of fruit salad to complete the meal.

Monterey Breakfast Pie

  • Servings: 9 squares
  • Difficulty: easy

Ingredients:

  • 1 pound breakfast sausage
  • 1 teaspoon garlic powder
  • 2 1/2 cups Monterey Jack cheese, shredded and divided
  • 1 1/3 cup milk
  • 3 eggs, large
  • 3/4 cups biscuit/baking Mix
  • black pepper

Directions:

  1. Preheat oven to 400 degrees. Spray a 9 x 9 pan with non-stick spray.
  2. Cook sausage in a large skillet over medium heat until meat is no longer pink. Sprinkle with garlic powder. Drain grease from pan. Stir in 2 cups cheese. Spread meat in pan.
  3. In a bowl beat the milk, eggs, biscuit mix, and pepper. Pour over sausage mixture.
  4. Bake for 20-25 minutes or until done. Sprinkle with remaining cheese; bake 1-2 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.

    Thanks for reminding me how much the family use to love those Bisquick “Impossible Pies” Time to keep a box on hand for the colder weather. PS I made the Bubble-up Chicken casserole last night (but halfed the recipe since it’s just me). However, I ate the whole thing it was so yummy and comforting. I had all ingredients on hand except the refrig. biscuits so I substituted Italian croutons. Thanks again ’cause I don’t need a meal planning guide when I have you. Hugs from afar.
