Day 210: Check In

Thirty weeks: It has now been seven months since I have seen my parents. My father is fragile as far as his health especially his lungs so I am terrified of the kids or I bringing something to them. Even if it isn’t Covid the flu or something else is just as bad could really be awful for them. So, we aren’t even taking chances with masks.

I am back to cooking lots of creamy casseroles and comfort foods again. I had taken a bit of a break for some soups and salads but we are all sort of on edge (whether we know it or not) about the state of the United States with Covid-19, the election, and worrying about jobs and our futures and the futures of our children.

I did get a butternut squash the other day so that may become soup soon. I also got three pie pumpkins, sometimes called sugar pumpkins, to roast and freeze for pies and maybe some ravioli. We will see how adventurous I get. I just read that canned pumpkin is a shortage in some areas. I am glad I got my pumpkins early this year. I guess that some of the growing area had too much rain this year so the crops weren’t as plentiful. You just never know.

Other than canned pumpkin, bagged stuffing, sanitizing wipes, and canned meats and soda are still in short supply in our area. What is hard to find where you are?

    Not much is hard to find here now! We can get most things, thank goodness!

      Great! I think it just depends on where you are. I noticed the price of chicken breasts here doubled since last week! Eek.

    We have limits on canned sodas due to aluminum shortage. But—suddenly we have disinfecting wipes on the shelves! Go figure.
