Cheesy Cornbread Sloppy Joes

Since the Michigan Supreme Court struck down the governor’s mandates since April 30th last week our cases of Covid-19 have started trending upwards again. We are now on New York states quarantine list so we cannot go to New York next week. We are disappointed to say the least. We were looking forward to seeing family and just getting away from here for a few days. We are afraid our Michigan license plates will just stick out too much.

Sigh. We are hoping things get better soon but I don’t know. We all got our flu shots this year just to be safe. But to go from about 50 cases of Covid in Michigan to almost 1,500 today? Not looking good.

Verdict: We all really liked this dish. It was simple, flavorful and the cornbread was, well, cornbread. Next time I will add an extra can of cream corn in place of the milk to help moisten it more and put some of the cheese on top after baking it.

I served this with a side of green beans and a green side salad to complete the meal.

Cheesy Cornbread Sloppy Joes

  • Servings: 6-8

Ingredients:

  • 2 pounds ground beef
  • 1 onion chopped
  • 1-1/2 cups ketchup
  • 1/2 cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon chili powder
  • Salt & Pepper, to taste
  • 2 cups sharp cheddar cheese, shredded
Cornbread:
  • 1 (8 1/2 oz) box Jiffy cornbread mix
  • 1/2 cup milk
  • 1 egg, beaten

Directions:

  1. In a medium skillet, brown ground beef and onion with chili powder, salt, and pepper.
  2. When the beef is cooked through drain any extra fat then stir in ketchup, brown sugar, and Worcestershire sauce.
  3. Simmer, uncovered, over low heat for 10 minutes or until sauce thickens.
  4. Transfer the beef mixture to a 9×13 baking pan. Top with cheese.
  5. In a small bowl, stir together the cornbread mix, milk, and egg.
  6. Evenly spread cornbread batter over the cheese.
  7. Bake, uncovered, at 350 degrees for 25-30 minutes, until the cornbread is golden.

  4. Our stores are out of cornmeal every time I put it on hubby’s grocery lust. Frustrating! Sounds great though. Super idea!
