Grilled Pork Loin Sandwiches

I have been reading on the internet about many people planning for the next round of Covid-19 and/or the flu by buying extra groceries and stocking up. I haven’t really thought of this as we have our little pantry that I use to try and only buy things on sale when I can. We are cleaning out our freezer this week so I will need to stock that soon but I cannot think of too many things we “need” right now. Maybe some rice and canned vegetables but even those I have a couple weeks worth. Is there something you are stocking up on or planning on stocking up on for the next few months?

This dinner was part of cleaning out the freezer. A simple pork loin was perfect for sandwiches.

Verdict: This was such a simple meal and everyone was commenting how good it was. The best part is that each person can customize their sandwich to what they like. My daughter left off the onions and added steak sauce to hers. My son had everything on his plus hot sauce. I ate mine as is.

I serve this with a nice salad to complete the meal.

Roasted Pork Loin

  • Servings: 6-8

Ingredients:

  • 2-3 lb pork loin
  • 1 tablespoon cooking oil
  • ground pepper, salt, and garlic powder
  • 2-3 onions, sliced thinly
  • 2 tablespoons butter
  • 1/2 pound Provolone cheese (sliced)
  • Crusty French bread or pita bread (enough for 8 servings)
  • Toppings as desired – honey mustard sauce, steak sauce, ketchup, etc…

Honey Mustard Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons stone ground mustard
  • 1 tablespoon honey
  • 1/8 teaspoon ground pepper

Directions:

  1. Preheat grill to 350 degrees. Oil rack well before cooking.
  2. Rub the pork loin with salt, black pepper, and garlic powder.
  3. Grill until digital thermometer reads 145 degrees, approximately 45 minutes- 1 hour depending on thickness.
  4. While pork is cooking add butter to a large skillet with onions over medium-low heat. You want the onions to cook low and slow until well browned. Stir occasionally to keep onions from burning.
  5. Make honey mustard sauce by combining all ingredients in a small bowl until well blended. Cover and refrigerate until ready to use.
  6. Remove pork loin from grill when cooked and let rest for 5 minutes.
  7. Warm your choice of bread in the oven, toaster, or microwave.
  8. Thinly slice the pork and place on top of bread, top with Provolone cheese. Place in broiler, open faced, to melt cheese if desired.
  9. Top with onions and honey mustard and serve immediately.

    Those meals when everybody can put it together as they want are always great. That’s also why I love tacos or tortillas with different varieties of fillings. And it is simple to make!
