As the days are getting shorter and shorter we are feeling the cold chill bearing down on us. Semi homemade meals such as this with frozen tortellini get dinner on the table fairly easily and still taste great. Don’t want ham? Change up the meat or leave it out. It is totally up to you. Remember make these dishes your own!
Verdict: We love the ham and cheese because it was something different. We have been eating lots of ground beef and chicken lately so I small piece of ham was perfect to add to this dish. Don’t have leftover ham in your freezer? A small ham steak would work in this too!
I served this with a side of green beans and a green side salad to complete the meal.
1 cup cheese, shredded (your choice – Pepper Jack, Mozzarella, Colby Jack, Sharp Cheddar, or a mixture)
Directions:
Melt butter in a large oven-proof skillet over medium heat. Add diced onion and cook until onion is translucent. Add ham. Cook and stir about 3-5 minutes until onion and ham starts to turn light brown.
Add chicken stock and tortellini. Season with salt and pepper. Stir to combine and let mixture come to a boil. Cover with lid, then reduce heat to low. Simmer 15 minutes or until tortellini is tender. Remove lid; stir in peas and cream. Remove from heat and stir in the cheese.

My kids love it. I try to sneak in peas with it once in awhile but only one likes peas.
