I took yesterday off to regroup and spend the day watching the inauguration and the surrounding news programs and fetes. I don’t expect much to change but I am hoping for calm for a few days.
Verdict: The best part is you can customize the fish to what YOU and your family like best. Add dill, parsley, chives, it is up to you. Don’t like capers? Cook the fish with them but then serve it without the capers if you like. I used green onions and capers in our dish and it was delicious!
I served this with broccoli and a side of quinoa to complete the meal.
Chopped or torn fresh herbs like parsley, chives or dill
Half of a lemon, quartered
Directions:
Preheat oven to 325 degrees.
Season both sides of the salmon with salt and pepper.
Melt butter in a large oven safe skillet over medium heat. When butter starts to bubble up add capers and garlic and stir continuously for 1 minute. Remove pan from heat and add the salmon, skin side down. Spoon the butter sauce over the salmon fillets.
Cover the skillet with aluminum foil. Bake for 15 minutes.
Remove pan from oven and remove aluminum foil. Spoon butter sauce over salmon. Return to oven and cook for 5-10 minutes until salmon is cooked through. If your salmon is thicker it may take a few more minutes.
If you wish to brown salmon a bit place under the broiler for 1-2 minutes until turning golden brown.
Remove pan from oven and add fresh herbs. Stir butter sauce and serve over salmon with a squeeze of lemon.
Capers….a secret ingredient to have on hand. 😋🍃

Salmon dishes are amongst my favorites. Capers go so well with salmon!
