Blackened Cod

We don’t eat enough fish or salmon in our house. We love it but it is just not something we think about making. I am starting to stock up on more fish, salmon, and shrimp so we will eat it more often. Do you eat enough fish?

Verdict: I love blacked fish. The sweet and spicy play between the flavors is my favorite. This one has a bit more heat than I usually make but it was really good. If you don’t like than much heat cut back on the Cayenne pepper and add a bit more brown sugar to make it sweeter. Also the brown sugar helps give it that blackened look when it melts and crystallizes in the bottom of your fry pan.

I served this with baked potatoes, green beans, and a green side salad to complete the meal.

Blackened Cod

Ingredients:

  • 2 tablespoon olive oil
  • 2 lb cod, if frozen thawed and patted dry
  • 1 tablespoon light brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon Cayenne pepper

Directions:

  1. In small bowl, combine the light brown sugar, paprika, cumin, salt, garlic powder, thyme, black pepper and cayenne pepper. Rub the seasoning into the fish, making sure it’s entirely coated.
  2. Heat olive oil over medium-high heat in large skillet. Add fish to skillet, cook in batches if needed not to overcrowd pan, and cook for 4-6 minutes per side (depending on thickness of cod) or until blackened. Remove from skillet and serve hot.

  5. I know that I don’t eat enough fish although I do eat salmon. I ‘ve never had it this way, though. Sounds good.
