Beer Brats with Caramelized Onions

So, now that we have completely moved, AGAIN, I have finally found my camera cord and can start posting some of our meals over the past month or so.  Life has been insane with packing, moving and unpacking but we did it.  We are all moved in (well, except for the 30 boxes in our garage) but most of those are on the eventually list.

But, after an entire month of eating out my family was overjoyed to start eating at home again.  I think if they see another burger, fry or chicken sandwich they will cry.  We made the best of it but all the appliances are in and we can start cooking!

We love flavor.  The picture does not do this dish justice.  If you could cook these and then grill them to brown them they would be AMAZING!  As we don’t have a grill and I could not find the good fry pan they were a little pale.

I used a recipe I found on Pinterest from eat, live, run for Beer Brats with Caramelized Onions.   They recommend a seasonal or flavored ale but I only had Honey Brown on hand and it was fine.  Also, I added more garlic than the recipe called for as my family loves garlic.  Adjust as you see necessary.

I served this with a side of Garlic Oven Roasted Potatoes and a salad.  The whole house smelled wonderful.


1 lb brats

1 large onion, thinly sliced

3 cloves of minced garlic

1 bottle beer (12 oz), preferably a red or darker (I used Honey Brown)

2 tbsp butter or margarine

1/2 tsp salt

1 tbsp brown sugar

2 tsp Worcestershire sauce


  1. Heat the butter over low-medium heat in a large saucepan. Once hot, add the onions and let cook slowly for 15-20 minutes. Turn up the heat to medium and add the thinly sliced garlic and saute for another three minutes until toasty.
  2. Add the bratwursts to the pan, along with the beer. Stir and bring to a boil. Cover, reduce heat and simmer for about 15 minutes. The bratwursts will turn white as they cook.
  3. Remove the sausages with a slotted spoon and place on a plate. Turn the heat to high so the beer mixture boils again. Add the salt, brown sugar and Worcestershire. Stir well and continue boiling.
  4. At this point if you are going to grill your brats you should place them on a warm grill to get those nice brown grill marks on each side.  If not skip to step 5.
  5. When done your beer should have reduced down to about a quarter of a cup of liquid. Place grilled brats back in the beer sauce and spoon sauce over.

Serve brats with sauce and onions on top.
