So this all started because I saw a recipe on Pinterest for the Best Steak Marinade in Existence. You know I had to try it. “The Best?” Really?
So, I made steak one night. Used the recipe from PlainChicken.com for the Best Steak Marinade in Existence.
It was REALLY good. My kids ate it up and I made 2 steaks so I had plenty of yummy leftovers. I actually ended up making 3 meals from the steak.
Steak Marinade:
- 1/3 cup of soy sauce
- 1/2 cup of olive oil
- 1/3 cup of lemon juice
- 1/4 cup of Worcestershire sauce
- 1 1/2 TBSP Garlic powder
- 3 TBSP dried basil
- 1 1/2 TBSP dried parsley flakes
- 1 tsp freshly ground black pepper
- 3 tsp minced garlic (we LOVE garlic so I changed to 3 tsp from 1 adjust to your taste)
Mix all ingredients in a Ziploc bag and add steak. Marinate at least 1 hour up to 8 hours.
Salad:
- 1 cup of spinach
- 1 cup of shredded lettuce
- any of your favorite veggies – tomatoes, green peppers, onions, cucumbers, red peppers
- 1/2 cup of steak Marinated, cooked and cubed
- favorite cheese – Parmesan, cheddar, feta,
- 3 tsp salad dressing
Mix all ingredients together and serve with a side of rolls or bread.
This was another of our to-go meals. The kids thought it was plenty filling and I was pleased that they were getting some greens and veggies. I used the above recipe as one LARGE serving, a dinner salad.
It is getting tougher to come up with easy meals that my kids can eat in a car from one plastic bowl with one utensil. I limit them to one utensil because I was losing forks and spoons at a rate to high to replace consistently and we all do not like plastic utensils that break. I also like for the meals to cover all the bases – protein, vegetable, carb and dairy when possible. It tends to keep them fuller during dance and the hour drive to and from the studio.
