We’re having a heat wave! Well, it really is 10 degrees out but the sun is shining! That makes all the difference in the world. Everyone I have met today seems in a good mood. Usually people have their heads bowed and their hands shoved in their pockets and are doing the quick shuffle as fast as they can to their destination. Today people are smiling and saying, “Hello.” What a difference a little bit of sunshine can make in our outlook on life.
Now I know the picture above looks deceiving. We had a split dinner last night meaning half the family ate at one time and the rest of us later. But, my son remembered to take a picture of his plate before eating. He also commented on how he made sure it was plated nicely because presentation is just as important as taste. I LOVE this kid!
I had frozen boneless pork ribs to use yesterday and I really did not want saucy ribs or pulled pork. I finally settled on trying to use the ribs in several dishes. So, I cooked them in my slow cooker all day knowing that we would not all be eating at the same time. That is the beauty of the slow cooker because the meal was ready at 6:30 pm to eat and still ready at 8:45 pm.
I used the pork tonight in tacos but I will use the leftovers tomorrow in a dish to make a meal that I can have on the table in 30 minutes or less. I love the idea of cook once, eat twice!
This was a tasty way to use the meat and not have to use barbecue sauce. You can slice or shred the meat to use in several different dishes. Tonight we used it in tacos. The beauty of the recipe is you can make it as spicy as you wish by using mild salsa instead of medium and more or less cayenne pepper as you like.
Everyone really liked the flavor of the meat and the best part was it was all from things I had on hand.
This would be good served over Mexican rice, cheesy rice or egg noodles with extra salsa and cheese for garnishes.
- 4 lbs. boneless pork ribs
- 1 cup medium salsa
- 2 tablespoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon oregano
- Place pork ribs in the bottom of the slow cooker.
- Mix remaining ingredients in a small bowl. Stir until well combined.
- Pour mixture over pork.
- Cook on low 8-10 hours until meat is fully cooked and tender. Cut or shred to serve.
