Now I very rarely have leftover corned beef because my family loves it so much. So, I pick up 3 to 5 extra to have on hand over the next few months just make some of these dishes such as the Irish Corned Beef Tacos with Guinness Sauce.

I first made these Reuben Style Hawaiian Slider Sandwiches (click for link to recipe) traditionally with ham and cheese but then started mixing up the meats and cheeses. The corned beef and Swiss cheese was the favorite version for all of us. If you love Reubens or corned beef you will LOVE these sandwiches!
