Slow Cooker Garlic Parmesan Chicken and Potatoes

(My family takes the pictures of dinner on Tuesday and Thursday when I am away. Not quite like when I take the pictures but it gives you an idea of the dish.)

School is over. Lessons for cello are off for the next few weeks. We only have dance left until the end of the month. Things are slowly starting to wind down. I still need to feed my family on Tuesdays and Thursdays when I am not at home and slow cooker meals are the best when it is 90 degrees outside. No heating up the kitchen and the rest of my family can serve and finish dinner on their own.


Everyone said how much they liked this dish.  To keep the chicken whole and not end up dry or falling apart the chicken cannot sit all day. Your potatoes will become mushy and the chicken will over cook. It takes about 7 hours to cook the potatoes through on low.

My family had this with a green salad and vegetable with this meal.

Slow Cooker Garlic Parmesan Chicken and Potatoes

  • 2 lbs. red potatoes, cleaned and quartered
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 2 lbs. chicken breast, skinless and boneless
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • salt and pepper
  • 1 cup Parmesan cheese, freshly shredded
  • fresh parsley, if desired


  1. Place potatoes in bottom of slow cooker. Drizzle with olive oil and sprinkle with garlic and thyme. Stir to coat potatoes.
  2. Sprinkle both sides of chicken breast with basil, oregano, rosemary, salt and pepper. Lay chicken over the top of the potatoes.
  3. Cover and cook on low for 7 hours or on high for 4 hours.
  4. Sprinkle with Parmesan cheese and parsley prior to serving.
