Orange Cake with Orange Glaze

My partner talks about an orange cake she used to ask for every year for her birthday. She doesn’t remember the recipe other than she thinks it was made with an orange cake mix and orange juice. Every so often I try to find a recipe she will like (without the cake mix) for an orange cake.

Verdict:

My daughter and I loved this cake while my partner just liked it. The reason we loved it was that the orange flavor was not overpowering and the cake was not too sweet. The reason my partner just liked it rather than loved it? The orange flavor needed to be stronger and the cake was not sweet enough. So, it all depends on your taste.

If you want a stronger orange flavor I would add more orange zest to the cake and a bit to the glaze. All depends on your taste in cakes.

Ingredients:

  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup orange juice
  • 1 teaspoon vanilla
  • 5 large eggs
  • orange zest from 2 large oranges

Orange Syrup

  • 1/2 cup sugar
  • 1/2 cup orange juice

Orange Glaze:

  • 2 cups powdered sugar
  • 2-4 tablespoons orange juice

Directions:

  1. Preheat oven to 350 degrees. Line the bottom of a 13″ x 9″ baking dish with parchment paper, then grease well.
  2. In a large bowl cream together on medium speed the butter and sugar for 5 minutes. Keeping the mixer on the same speed, add the eggs one at a time and mix well, scraping down the bowl, after each addition. Add the orange zest.
  3. Whisk together the flour, baking powder, baking soda and salt. Slowly mix add to butter.
  4. Make a well in the center of the ingredients.  Add orange juice, buttermilk and vanilla. Beat until smooth.
  5. Bake cake 45-60 minutes or until a skewer inserted in the center of the loaves comes out with a few moist crumbs.

Syrup:

  1. As the cake bakes, prepare the orange syrup, In a small saucepan cook the sugar and orange juice over low heat until the sugar dissolves.  Bring to a slow boil and allow the mixture to thicken a bit.
  2. When the cake comes out of the oven, poke holes in the top of the cake with a skewer.  Carefully pour the orange syrup over the cake letting the syrup fill in the holes. Allow the cake to cool completely.

Glaze:

  1. Make the glaze by adding the powdered sugar and 2 tablespoon orange juice to a medium bowl. Beat until smooth. Add more orange juice, a teaspoon or so at a time, as needed to reach a thick but pourable consistency.  Pour the glaze over the cake. Let glaze dry before serving.
