Sweet and Spicy Pork Noodles

I have said before that the pictures I take of our dinner is often my plate as it gets to the table. I don’t use special lighting or tweezers to move my food around to make it look perfect. Although I do my best to make the food look appetizing there are still splotches of sauce or meat juice on the bowls and plates. This night my son served us. He realized quickly when he divided the whole recipe into four bowls that he had over-served us but he tried.

Verdict:

This was a family hit! The dishes that they can add what they like – more soy sauce, more hot sauce, more peanuts, are the dishes that my family really want again and again. Taste the dish and add more garlic or whatever you like to your dish!

Ingredients:

  • 2 cloves garlic, finely minced
  • 2 – 3 stalks green onions, cut
  • 1 cup Peanuts, roasted salted
  • 2 tablespoon chili garlic sauce
  • 1/3 cup Honey
  • 1/3 cup Soy sauce
  • 1 -2 dashes Sriracha
  • 16 oz  rice noodles
  • 1/8 tsp Red pepper flakes
  • 1/2 cup Sesame oil
  • 1/4 cup + hoisin sauce
  • 2-3 cups pork, precooked and cut into pieces, leftover pork loin works well for this

Directions:

  1. Bring a large pot of water to a boil and cook noodles until al dente according to package directions.
  2. In a small bowl mix soy sauce, hoisin sauce, honey, chili garlic sauce, and garlic.
  3. A few minutes before the noodles are done, in a large saute pan, heat sesame oil over medium heat and add sauce  and pork and stir, cooking garlic.
  4. When noodles are done, drain and add immediately to pan with sauce and pork.  Stir until the noodles are well coated and pork is heated through. Taste noodles and adjust spices to your liking.
  5. Top with peanuts, green onion, and Sriracha. Serve hot.

    I just take several photos and pick the nicest one of the bunch. I am not very good at staging food, so I have learned to trust the camera. Nice recipe. Thanks for sharing.

      Pork loin that was cooked the night before with just salt, black pepper, and garlic powder. He chopped it into little pieces and he used the rest of it.
