Amazing Grilled BBQ Meatloaf

So my daughter had her Covid test on Friday. We still have not heard anything as of the time I writing this. I think the waiting is the worst part for her. Every yawn, twinge, or sniffle carries the thought of is this the first sign of getting sick? We are still quarantined until the end of the week but so far we all seem okay.

We are continuing our summer of grilling. We are coming up with all sorts of ideas, the kids are helping too. We are seeing what are the different items you normally don’t grill that we will figure out how to grill. Meatloaf, turkey, and even a cake are on our list for the summer. This is lots of fun.

Verdict: This was delicious! My family asked that I never make meatloaf in the oven again. It was juicy and flavorful. Tender slices that were perfect for a sandwich the next day.

I served this with baked potatoes, green beans, and a salad to complete the meal.

Amazing Grilled BBQ Meatloaf

  • Servings: 10-12 thick slices
  • Difficulty: easy

Ingredients:

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/3 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 3 large eggs
  • 1 cup bread crumbs
  • 2 tablespoons milk
  • 3 tablespoons Brown Sugar Bacon Seasoning (ex. Grillmates)
  • Optional: barbecue sauce for a glaze

Directions:

  1. Heat the grill to about 350° F
  2. Combine all the ingredients in a large mixing bowl until well blended.
  3. On a double piece of heavy-duty foil or in an aluminum pan, fashion the meat mixture into 2 loaves
  4. Brush with barbecue sauce or ketchup if desired.
  5. Grill the meatloaf over indirect heat for 1 to 1 1/2 hours, or until it registers at least 160 F on an instant-read thermometer.
  6. Remove from grill and rest for 3-5 minutes before slicing.

  3. Fudge! I just oven-baked a large meatloaf to eat on the rest of the week! We could have grilled it. In a couple of weeks when we’re in meatloaf mode again we will definitely try this! Super idea!
