As we head into fall and back-to-school or back to work I know in our house we want quick meals that come together easily and have tons of flavor. If my family won’t eat it why do I bother cooking? I love these super easy dishes that are made with frozen chicken strips or chicken patties. Put them together over the weekend for a quick meal during the week or have your older teens put help cook dinner! Make them your own by changing cheeses or spices to your liking.
Chicken Macaroni and Cheese Parmesan (click for link to recipe)

This was definitely one of those dishes made up on the spot that became part of our family favorites. I love when things like that happen. I was thinking of the Applebees Honey Chicken tenders with macaroni and cheese dish but made it into Chicken Macaroni and Cheese Parmesan. This is so hearty that they ate this dish for lunch the next day too.

This dish is a recent addition to our repertoire. It is delicious and so simple. You can change up the mustard to your favorite but we love the addition of the Dijon to give it a bit of depth to the flavors. The most difficult part of making these is cooking the chicken before making the dish or melting the butter. Such a simple dish!
Easy Chicken Parmesan (click for link to recipe)

My family would easily eat Chicken Parmesan once a month. I love making it but frying the chicken and baking it mean that it is a weekend day long project for us. Using frozen crispy chicken strips or tenders, jarred sauce (you can easily doctor this up to make it taste better), and a bit of freshly shredded cheese make it much easier to have on a weekday. I love that the kids can easily pull this out and make if for us if needed.

This bowl sounds weird if you have never had it before but it is so good! Use chicken or brown gravy over the dish – whatever you have on hand from a jar, packet, or frozen doesn’t matter just use what you like. My kids love it when I pull this dish up every once in awhile. I love that it is super easy to make especially if you have leftover mashed potatoes. Hint: Make extra potatoes next time you cook them and you can easily have this dish for the next night!

This meal came about after a busy day and I forgot to make meat out for dinner. A rough chop of chicken tenders and a bag of pizza dough ball from our local grocery store led to Chicken Parmigiana Pizza. Spice it up with a pinch or two of red pepper if you like or even make it more savory with a sprinkle of additional oregano and basil to your sauce. Doctor it up and make it yours! My family loves this now and it has become a go to on busy nights.
