Italian Sausage Alfredo Casserole

Well, life decided to throw us a bit of a curve ball. We are all fine but we received a call from the County Health Department that my son was in contact with a person with Covid-19 at school and now he has to quarantine until October 29th. If he shows any symptoms between now and then he is to be tested. So, all is well but that has taken some restructuring of our lives again. Just when you think you are starting to get it together life has to let you know you are not in charge.

Days like these call for rich comfort food. I used store bought alfredo sauce to cut down on the time to make this but you can make homemade sauce if you wish.

Verdict: This is so rich and creamy that a small serving is all you need to feel full. We added lots of broccoli and a green salad as a side to balance our the richness of this meal.

Italian Sausage Alfredo Casserole

  • Servings: 6-8

Ingredients:

  • 1½ pounds Italian sausage, casings removed
  • 1 (16 oz) package penne pasta
  • 2 (10 oz) containers refrigerated Alfredo sauce
  • 1 (8 oz) container sour cream
  • 1 (15 oz) container ricotta cheese
  • 2 garlic cloves minced
  • 2 large eggs lightly beaten
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley or basil
  • 2 cups mozzarella cheese

Directions:

  1. Preheat oven to 350 degrees. Spray a 9×13-inch casserole dish with non-stick spray.
  2. In a large skillet, cook sausage until no longer pink breaking into small pieces as it cooks. Drain off any fat.
  3. Prepare pasta according to package directions. When pasta is cooked drain and return to pot.
  4. Add cooked sausage, Alfredo sauce, sour cream, ricotta, garlic, eggs, Parmesan and parsley. Mix all ingredients together.
  5. Pour pasta mixture into prepared pan and top with mozzarella cheese.
  6. Bake, uncovered, for 30 to 40 minutes, until browned on top and warmed through.
