Simple Fluffy Buttermilk Pancakes

We are a breakfast for dinner family. At least once a week, usually Wednesday or Thursday because they seem to be the toughest day of the week, we have some sort of breakfast/brunch meal. I love eggy casseroles with all sorts of toppings mixed in because they can be made ahead of time and rest in the refrigerator during the day and cooked for dinner. Waffles and pancakes are great too because they can be mixed up in no time and kept warm while the bacon is baking. Yes, I bake my bacon.

Verdict: I love pancakes and waffles. I would eat them every day in different flavors if my family would allow it. They are so simple to make and taste so good! These are one of more popular to make pancakes as they are light and fluffy. I love the thick pancakes that soak up all the melted butter and real maple syrup.

I never have buttermilk on hand. It is just not something I use enough of to actually buy it. So, I learned in Home Economics class in 7th grade how to make homemade buttermilk. Remember Home Ec.? My kids school still has cooking and sewing classes and I think it is amazing that they do. This is one of those things that stuck with me all these years later.

I serve these with bacon and a side of fruit salad to complete the meal.

Simple Fluffy Buttermilk Pancakes

Time: 20 minutes prep, 20 minutes cooking time

Ingredients:

1 1/2 cups whole milk or half and half
2 tablespoons white vinegar
2 cups all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
4 tablespoons butter, melted (plus extra for cooking)

Directions:

Combine milk with vinegar in a medium bowl and set aside for 5 minutes. It will look curdled when done.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk eggs and butter into vinegar/milk. Pour the flour mixture into the wet ingredients and stir just until lumps are gone.
Heat a large skillet over medium heat, melt butter on skillet. Pour 1/4 cups of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Serve hot.
Tip: Be careful your pan doesn’t get too hot while cooking. It will smoke and pancakes will burn on sides and be raw in the center.

When my children were little, we had “breakfast for dinner” at least once a week. It is always such a rush to get out the door in the morning and the weekend is sooo far away.

Thanks for this post – I am going to have some fun with the grandkids trying to make pancakes, that is when we get out of ‘lockdown’!

Pancakes are mostly part of the dinner menu rather than of the breakfast menu!

I think all high schools or middle schools should have Home Economics and Auto Shop and let the boys and girls do at least a semester of each to get the basics of both.

I still have the psychedelic book bag I made way back in my Home Ec class.

  Yes! Our school does 10 weeks Home Ec, 10 weeks of woodworking, 10 weeks of Computer Aided Design an 10 weeks of Reading (additional help for all students). We love it.

Do you use vinegar in place of eggs? What does the vinegar do?

  The vinegar sours the milk to make it like buttermilk which is hard to find in our area.
