Apple Fritter Casserole

The weekends tend to be my baking day. Because we have a bit more time and don’t have the pressure of getting everyone up and going it is easier to take the time to bake a sweet treat to add to our brunch. This dish is super easy and sweet so it fills those boxes for our brunch days.

This recipe calls for bakery croissants, not the refrigerated dough kind that you bake. You want the fluffy buttery croissants usually sold in packages of 6 or 8. If you cannot find the large ones just use double small ones.

Apple Fritter Casserole

Ingredients:

  • 5 large apples, peeled, cored and diced
  • 6 tablespoons butter
  • 1 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon corn starch
  • 2 tablespoons warm water
  • 8 large croissants, chopped into chunks
  • 1/2 cup heavy cream
  • 1/2 cup apple sauce
  • 3 eggs, lightly beaten
  • 1/4 teaspoon cinnamon
  • 3/4 cup powdered sugar
  • 1/4 cup half and half (plus extra for thinning if needed)

Directions:

  1. Preheat oven to 375 degrees. Spray a 9″ x 13″ casserole dish with non-stick spray.
  2. In a large skillet, melt butter over medium heat. Add brown sugar and stir until sugar melts into the butter.
  3. Add cinnamon and nutmeg, stir.
  4. Add diced apples and stir to coat. Simmer mixture for 5 minutes or until apples are soft and to the desired texture.
  5. In a small bowl combine cornstarch and water. Mix well then add cornstarch mixture to apples and stir. Remove from heat and set aside.
  6. Place the croissant pieces, spreading out so they cover the bottom of the pan. Pour apple mixture over the croissants and spread to cover.
  7. In a separate bowl combine heavy cream, apple sauce, eggs, and cinnamon. Mix well.
  8. Pour egg mixture over croissants and apples.
  9. Bake for 25 minutes or until center is set. Remove from oven, allow to rest for 5 minutes.
  10. While casserole is cooking, in a small bowl combine half and half and powdered sugar 1/4 cup at a time. Mixture should be thick but should drip from spoon when held in air.
  11. Drizzle casserole with icing and serve immediately.

          If you like a tart firm apple those are okay. I prefer a sweeter older (read just about to go bad) apple that is slightly softer in feel.

      I have never done it ahead of time. So, I am not sure. When I get a chance I will need to remake this and give it a try.
