Rainbow Waffles

My daughter had her friends over the other night for a sleepover. My daughter loves rainbows, sparkles and anything “pretty.” When she started talking about having the girls over I remembered the Duff Goldman rainbow cupcakes I made for a party year. (click for link to original post) I thought I could use a similar technique to make waffles for her and her friends for breakfast.

Verdict:

These were so cute! My daughter loved the colors and the whipped cream and sprinkles were an added bonus for her and her friends. Combine these waffles with the Waffle Bar from this previous post (click for link to post) and you have an amazing breakfast for a party!

The best part for me was that I could make them the night before, cool them and then put them in the refrigerator to reheat the next morning. It cut down on the morning rush with the girls here and made for a relaxing morning for me.

Tip: Use the Wilton food coloring for vibrant colors. The liquid ones will fade to muted colors as they cook but the Wilton colors stay bright.

Rainbow Waffles

  • Difficulty: easy

Ingredients:

  • 4 large eggs
  • 4 cups flour
  • 3 1/2 cups fat-free half and half
  • 3/4 cup vegetable oil
  • 3 tablespoons sugar
  • 2 3/4 tablespoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • Choice of food coloring

Directions:

  1. In a large bowl beat eggs, with a hand mixer, until light and fluffy.
  2. Beat in flour, half and half, vegetable oil, sugar, baking powder, salt and vanilla until smooth.
  3. Measure out about one cup of batter into paper cups for each color you have chosen to color your waffles. I used the ends of plastic spoons to help get the food coloring gel out of the jars and stir the batter with. Then when you are done you can throw the cups and spoons away.
  4. Mix the food coloring into the batter. Add as much or as little food coloring as you like.
  5. In your waffle maker pour the batter on color at a time until you have covered the waffle maker. Remember not to overfill the waffle maker or the batter will leak out!
  6. Cook according to waffle maker directions.
  7. Keep warm in oven until ready to serve.

    At the risk of being a “downer” on such a fun post, I’ll suggest that while you’re checking on peanut, gluten, and other allergies for your party guests, please mention the dye. Believe it or not, food dye allergies are becoming increasingly common and they can manifest later than others.

      I have a son with gluten and food coloring sensitivities. No red or yellow food coloring for him (it irritates his kidneys). He has his own separate pans and cooking utensils to avoid contamination. We did have one latex allergy so no balloons but these kids are all 15-16 so we know by now. But, thanks for the reminder.

      1. Yikes! You obviously have the allergy thing down pat! I mentioned it because I knew to ask about peanuts, gluten, etc. but didn’t know anything about food dye allergies until we had to deal with it ourselves. Thankfully it seems to be one of the easier ones to handle.

          It is in everything including places you don’t expect like marshmallows and even baked good like strawberry pie to brighten the red of the filling. No need for that!
