
What do you serve for a dessert on a warm night after grilling out? How about Hawaiian Luau Sundae. We wanted a dessert to use up some of the bits and pieces hanging around our house. We had bananas that we made into 2 large banana breads, a whole pineapple that needed to be used, and a half bag of sweetened coconut. I was thinking of bread pudding from O’Hana at the Polynesian when I made this up to use those ingredients up.
Verdict: This was AMAZING! I cannot even tell you how deliciously rich and flavorful this dish was. Both kids asked that we used the little bits leftover for a sundae for each of them again the next night. I grilled the pineapple with our dinner and toasting the coconut only takes a minute or two. Using the best jarred caramel sauce we could find made this creamy sweet dish with a buttery finish come together perfectly.

I remember when we went to Maui banana bread was a super popular treat and we saw it everywhere. We bought some from a vendor on the road to Hana and it was warm and absolutely delicious. This sounds like a treat reminiscent of that!
