Back to School: 5 Easy Casseroles for Busy Days

Casseroles are one of my go to meals when life gets busy. I especially like slow cooker casseroles because they can cook while I am busy doing other things. Even the Spare Rib casserole is part of a cook once eat twice meal.

This is one of our favorite discoveries in cook once eat twice. We made a large batch of ribs in the slow cooker with enough for leftovers. Using the leftover ribs we made this amazing casserole. Cheese, mashed potatoes (homemade leftovers or instant) and rib meat are amazing together!

Semi homemade meals are another way to cut time and still have delicious meals on busy nights. This recipe using frozen pierogies, one of our go-tos, instead of pasta or tater tots in casseroles. It gives the dishes a different flavor and textures.

Chicken, Green Bean, and Stuffing Casserole (click for link to recipe)

All the favorite parts of a Thanksgiving meal put together. You can use a turkey breast for this meal but we love chicken, green beans and stuffing casserole. Simple to mix together and make!

Cowboy Meatloaf with Mashed Potato Casserole (click for link to recipe)

Meatloaf and mashed potatoes in one dish! Yes, please! This is another dish you can use homemade mashed potatoes or instant (doctor them up with garlic, sour cream, etc…) to make a delicious dinner. Add your salad and green vegetable and you have the meal planned.

Slow Cooker Cinnamon French Toast Casserole (click for link to casserole)

Slow Cooker meals are great for busy days as they can cook while you are busy working or watching over your children for school. Most of the time the ingredients can be mixed together the night before in the bowl of the slow cooker and put on to cook after breakfast. We love breakfast for dinner and have it every Thursday night!

    I love using my slow cooker as well. I love cooking ribs this way for my dad as the meat falls right off the bones for him. thus making it easier for him to eat. Though I am going to have to try that french toast casserole. It looks delicious.
